Eggs are an important part of healthy nutrition. They contain anti oxidants and are rich in all essential amino acids. Moreover, they are a source of biological, high-quality proteins and other useful substances that our body needs. Eggs are also low in calories, in contract to what is mostly expected. A cooked egg contains only 90 calories. With this dish, the egg gets a special taste due to the combination of sweet fig mustard and the complex taste of lavender vinegar. Conserve the eggs preferably in a cool but not too cold place. the ideal temperature is between the 7 and 13 °C.

  • Groceries

    • 4 eggs • 1 shallot, chopped • 100 ml Lavender Vinegar • 5 tbsp Bonsecco Olive Oil • 4 tsp sea Mustard Figs • 2 sprigs parsley • 8 sprigs chives

  • Getting started

    Boil the eggs 8 mins. Peel the eggs and halve them. Mix the shallot, Lavender Vinegar, Olive Oil Bonsecco and Mustard Figs in a saucepan and bring to a boil.

    Step 2

    Pour the marinade into a shallow bowl or plate. Finely chop the herbs and mix with the marinade. Put the eggs with the cut side down in the arinade. Chill and leave to marinate for several hours.

    Plate and serve tip

    Delicious with roast beef salad with fig mayonnaise.
