The black summer truffle can be found in Italy. They are acquired by truffle hunters and their specially trained dogs. Summer truffles also are found in France, Southern-England and Germany. However, the best truffles are those from the chalk slopes of Umbria, where the truffles for the Oil & Vinegar Truffle Carpaccio are collected from the early spring till the late summer.

Truffle Carpaccio consists of paper-thin slices of the black summer truffle in sunflower oil. This summer truffle has a brown or yellow colour, inside out, and is able to give dishes an earthy flavor. A slice of truffle is also a fabulous and luxurious decoration, with which you can give every dish a touch of chic!
