Based on the production method (Travasi versus Solera), maturation time (amount of years) and density (thickness), the balsamic vinegars are valued with a specific rating: Rosso, Bronze, Silver and Gold.

This Aceto Balsamico di Modena IGP Silver originates from the vinegar home Giuseppe Giuste. After their establishment in 1605, nowadays the 17th generation is running this vinegar home. Preserving traditions, with its ancient natural recipes and production methods is very important to them. They possess a total of 1200 wooden barrels, half of them are from the 15th, 16th and 17th century. For ages, these barrels have been imbued with the aromas and flavors of grape must and wine vinegar from the best quality Trebbiano and Lambrusco grapes. The maturation takes about ten years, resulting in a syrupy balsamic vinegar with a density of 1.33-1.35.

Of course the maturation of this balsamic vinegar proceeds according to an old process -named Travassi- in a number of smaller barrels of different kinds of wood: oak, chestnut, ash, cherry tree, mulberry tree and juniper berry. Each kind of wood gives the balsamic vinegar its own aroma and taste. Altogether, this explains the aromatic, rich and intense body of this Aceto Balsamico di Modena IGP Silver. A sweet taste dominates in the beginning, but after that hints of oak, nuts, honey and prunes also emerge.
