Oil & Vinegar has selected the finest balsamic vinegars from the best vinegar houses in the Italian Modena. Matured in a natural way, without adding sugars, caramel or preservatives! With criteria on the producing method (Travasi versus Solera), density (thickness) and maturation period (the number of years), the balsamics have gain appreciation: Rosso, Bronze, Silver and Gold.

This Aceto Balsamico di Modena IGP Gold comes from the famous vinegar house Acetaia Leonardi. Since the establishment in 1871, the house has applied all the rules and traditions that are required, and they have guarded the secret that has provided the excellent quality of their balsamic vinegars for four generations. At the location where Leonardi is based, there used to be the formerly Vecchia Corte Rè – the Old King’s Court – a Roman estate that used to be the stopover of the duke, when he was on his transit from Modena to his summer residence. The drawing Vecchia Corte Rè on the bottles brings a tribute to this history.

Aceto Balsamico di Modena IGP Gold is only made with pure ingredients like the Trebbiano and Lambrusco grapes, and is naturally matured in barrels with different beautiful sorts of wood, like the so called Travasi method. Barrels are made of oak, chestnut, ash, cherry, mulberry and juniper give their own flavor to the Aceto Balsamico di Modena IGP Gold. The syrupy balsamic vinegar has a density of 1,35 – 1,37 and is a true feast for the tongue. It has a sensational and rich complex flavor, on the one hand it is powerful sweet with a narrowly acidity, while you can, on the other hand, taste different flavored tones, partly because of the different sorts of wood that that add body and spiciness to the balsamic vinegar. 

Aceto Balsamico di Modena IGP Gold can be used in different ways. It will taste delicious in combination with vegetables or meat that are grilled or barbecued, smoked salmon, fish, risotto and pasta. But it also tastes surprisingly good in combination with a cheese platter or even with sweet desserts like ice cream, strawberries or chocolate. It is also suitable as a digestive after dinner.

The designation IGP indicates that it is a local product with a protected designation of origin. The seal of approval Indicazione Geografica Protetta stands for the quality and traditional production method of the product, and will only be given by both the Consorzi in Italy as by the European Union, when a positive inspection has occurred.
