Cheesecake originally comes from Greece. The basic recipe was a combination of young, creamy cheese with something sweet which delivered a real treat. The cheesecake that everyone knows today, and licks their fingers for, comes from America. This cheesecake consists of cream cheese, sugar, and a flavouring of your choice. This cheese mix is then poured into a baking pan on top of a base of crumbled biscuits. Think of digestive biscuits, chocolate cookies or gluten-free cookies. 

Our cheesecake tarts taste just as exciting as they look! Baked cheesecake tarts made from cream cheese, Greek yoghurt and lime, on a bed of wholemeal biscuit crumbs and topped with a dollop of salted caramel crème. 

 

 

  • Ingredients

    • 250 g digestive biscuits • 150 g butter • 3 tbsp Lemon Curd • 2 limes • 300 g cream cheese • 150 g Greek yoghurt • 115 g caster sugar • 3 eggs • Crème de Salidou (salted caramel crème) • 6 hole muffin tin • 6 cake cases (paper)

  • Getting started

    Preheat the oven to 140 ºC. Crush the biscuits and place in a bowl. Melt the butter and add it to the crumbs. Place the cake cases in the muffin tins. Press a layer of crumbs into the cases to make a shell and press down firmly. Put in the fridge until firm.

    Step 2

    Put a teaspoon of Lemon Curd in the bottom. Grate the limes and squeeze the juice. Beat together the cream cheese, Greek yoghurt, sugar and lime zest until creamy, adding the eggs one by one. Finally, add the lime juice and mix everything together for a minute. Fill the tarts with the cheese mixture and bake for about 30 minutes. Then let them cool slowly in an opened oven.

    Serving tip

    Garnish with a tasty dollop of Crème de Salidou!
