Origin
Our Novello is made in the Tuscan coastal region of Maremma. Like every year, producer Stefano is eager to pour the first drops into a bottle so that everyone can taste 'his' Novello. Taste, smell and enjoy this Mediterranean delicacy and imagine yourself in la bella Italy. What are you waiting for?!
Olive variety
The Novello is made from hand-picked Frantoio olives, Leccino olives and Moraioli olives. Most olives are harvested between November and February, but Novello olives are already harvested in October. Because the olives are picked so early, they are still packed with antioxidants, vitamins and aromas. Not only tasty, but also very healthy! Due to the early harvest, the olives do not release much oil (it is therefore a slightly more expensive process), but this means you get the very best olive oil you can imagine!
Application
The Novello has a fruity taste with a sharp aftertaste. Super tasty for dipping fresh bread or to combine with white balsamic vinegar from Modena, sea salt and black pepper for a delicious salad dressing. Also perfect for pouring over ice cream, in combination with our Black Hawaii Salt!
