The oil is notable for its ethereal white truffle aroma and flavor, turning the most ordinary dishes into something special. Can only be used cold as a finishing touch to your dishes and tastes wonderful with salads, beef carpaccio with pine nuts, eggs, pasta, macaroni with cheese, risotto and roast potatoes. The oil combines well with Balsamico di Modena IGP, Sherry vinegar and Lavender Vinegar. A dressing tip: 1/3 Lavender Vinegar – 2/3 Olive Oil with White Truffle.

The olives are harvested between October and Januaryand within hours processed into oil using the “cold press method”. By pressing the olives in this traditional manner, the flavor is optimally preserved and resulting in a high quality olive oil with a low acidity (<0.3%).

The olive oil is made by a family owned company in a small village in Liguria, which won a 'Great Taste Gold Award 2012' for this olive oil.
