Artichokes are originally from Ethiopia, but nowadays, Italy is the biggest producer of this vegetable in the world. Artichokes are the flower buds of the thistle. This grey-green flower buds consist of a lot of small leafs that are fold around the base of the flower. The flower buds are picked before they start to bloom. If an artichoke continues to grow, the leafs will open and a beautiful purple flower appears. This flower is beautiful, but not edible anymore. Artichokes are mostly used as a side dish, especially in Mediterranean dishes. Artichokes are not only delicious with a distinct taste, they are also very beneficial for our health. Artichokes namely contain a lot of anti-oxidants. Healthy and delicious!
