A unique fact about this type of olive is that it can be used to make both olives and olive oil. Most olives are only suitable for one purpose. Table olives often contain too little fat to make oil, which is why they are very tasty to eat, while olives that are very suitable for olive oil, typically have too much fat to serve at the table. However, this green Sicilian olive variety is special because it is suitable for both and makes a nice, buttery table olive.
