The Mexican kitchen is famous for its many delicious sauces, including guacamole. In Mexico, these sauces are better known as “mole”, the Aztec word for sauce. Among these moles, the “mole poblano” is seen as the most important and famous traditional Mexican sauce. This sauce is also known as the national dish of Mexico. Outside Mexico, the mole poblano is simply called “mole”.

The most important elements in this mole are chilli and dark cacao. This cacao balances and softens the spiciness of the chilli and provides a sweet taste. With this Mole Salsa, making a mole with a balanced flavour can be done in a matter of minutes! Just add some water and let it rest for about 5 minutes.

The sauce is delicious on meat and fish. Chicken or pork is highly recommended! In some local places in Mexico, a lot of sauce is poured over breaded chicken. You’ll get plastic gloves so you can eat it without getting your fingers covered! Nonetheless, when you try to put that into practice, you can still get messy! Thankfully, the taste totally makes up for that!
